Butter Cookie Recipe

Butter cookies are fun to make and your children will love helping you. This recipe makes about 3 cups of cookie dough.

Ingredients:

¾ cup of butter, softened
¼ cup of granulated sugar
¼ cup packed light brown sugar
1 egg yolk
1 ¾ cups of all-purpose flour
¾ tsp. baking soda
¾ tsp. salt (optional)

Step 1

Preheat oven to 350 degrees.

Step 2

In a medium size bowl, combine ¾ cup of softened butter, ¼ cup of granulated sugar, ¼ cup packed light brown sugar and 1 egg yolk.

Step 3

Add 1 ¾ cups of all-purpose flour, ¾ tsp. baking soda and ¾ tsp. salt (optional). Mix well.

Step 4

Refrigerate cookie dough in a covered container for at least four hours or until firm.

Step 5

Place cookie dough on a piece of wax paper. Roll cookie dough into a log and refrigerate covered for 30 minutes to an hour.

Step 6

Remove from refrigerator and slice cookie dough into ¼ inch round slices.

Step 7

Bake 12 to 15 minutes or until edges begin to brown.

Step 8

Cool cookies on cookie sheets for about 1 minute. Place cookies on wire rack to cool completely.

Step 9 VARIATION

Instead of rolling cookie dough into a log shape, roll it out flat about ¼ inch thick. Use small cookie cutters to cut shapes. Let your children decorate them with icing, rock or coarse sugar, or sprinkles.

* Be sure to put your sugar on before baking. Sprinkles need to go on as soon as cookies are removed from oven (before 1 minute cooling). Icing needs to be done when completely cool. Sprinkles can also be applied right after icing.
