Honey Popcorn Cluster Recipe

Honey Popcorn Clusters are great for parties. They are easy to make and fun to eat. This tasty treat can be stored for up to a week in an air tight container.

INGREDIENTS:

Vegetable Cooking Spray
6 cups of air-popped popcorn
2/3 cup Dole Golden or Seedless Raisins
½ cup Dole Chopped Dates or Pitted Dates, chopped
1/3 cup Dole Slivered Almonds (optional)
1/3 cup Packed Brown Sugar
¼ cup of Honey
2 Tablespoons Margarine
¼ Teaspoon Baking Soda

DIRECTIONS:

1. Line the bottom and sides of  your 13X9 – inch baking pan with a large sheet of aluminum foil.

2. Spray aluminum foil with Non-stick vegetable spray.

3. Combine popcorn, raisins, dates and almonds. Spread over the foil lined pan.

4. In a small sauce pan, combine brown sugar, honey and margarine. Bring to a boil over medium heat, stirring constantly.

5. Reduce heat to low. Cook for 5 minutes. Do not stir.

6. Remove from heat. Stir in Baking Soda.

7. Pour evenly over popcorn mixture stirring quickly to coat mixture evenly.

8. Bake at 300 degrees F for 12 to 15 minutes or until mixture is lightly browned. Stir the mixture once about halfway through cooking time.

9. Lift foil from pan and place on a cooling rack. Cool popcorn mixture completely.

10. Break into clusters.

PREP TIME: 20 Minutes
BAKE TIME: 15 Minutes
MAKES: 7 Cups
